Madrid is a dream city for anyone who loves good food and culture. Every visit feels like an opportunity to enjoy life to the fullest. The city is clean, safe, and full of restaurants for every taste and budget—a true paradise for food lovers like me.


Last week, I had the pleasure of dining at El Fogón de Trifón, thanks to my brother Jaime Sol, who told me, “Let me take you to a place that will surprise you.” And he was right. It was an amazing experience that I’ll remember for a long time.


The moment you walk into this cosy restaurant, you feel like part of their family. Open since 2002, El Fogón de Trifón is well-known to many, and it has become a favourite spot for fans of great Spanish food. Politicians, artists, athletes, and regular folks all dine here and are treated with the same warmth and care. It’s a family-run business where you can feel their passion for good service and hospitality.

What makes El Fogón de Trifón so special? For me, it’s three things: high-quality ingredients, recipes made with love, and generous portions. They don’t cut corners—everything is done with care. Every dish feels like a tribute to traditional Spanish cooking, made with years of experience and dedication.


Madrid is full of famous restaurants, but El Fogón de Trifón truly stands out. It’s not just about the food; it’s about the memories and connections you create while enjoying a meal. It’s the kind of hospitality that’s hard to find these days.


A big thank you to my brother Jaime for introducing me to this wonderful place, and to the team at El Fogón de Trifón for giving me such a great experience. If you’re ever in Madrid and want to try authentic Spanish food, this is a must-visit. You’ll leave with a happy stomach and a happy heart.

Torreznos with roasted almonds
Just by sitting at the table, you’re treated to this simple yet delicious delicacy: crispy pork cracklings (Torreznos) and roasted almonds.
Green beans with Jamón Ibérico
Truly delicious green beans cut to resemble spaghetti, cooked with Iberian ham and garlic. A real showstopper!!!

King prawns perfectly cooked
Quality ingredients are the hallmark of this place. These fresh king prawns were perfectly cooked.

Callos a la Madrileña
Without a doubt, one of Trifón’s treasures. Possibly the best Callos a la Madrileña I’ve ever had. If you visit this gem, don’t miss out on them, you can even order a half portion if you prefer.

Cillar de Silos. Spanish wine from Ribera del Duero
A good dish should always be enjoyed with a good wine, and Trifón’s wine list will not disappoint. Following their recommendation we enjoyed a Cillar de Silos wine from Ribera del Duero
